When you buy a carton of eggs at the grocery store, you want to know when they were laid, right? You can see this on the basis of the best before date (best before) date. That is 28 days later than the date on which the eggs were laid.

If a box has a date of, say, November 27, this means that the eggs were laid four weeks earlier. In this case, on October 30.

The floating test to see if an egg is fresh

Since you don’t always have access to the box to check the freshness of an egg, there is also another method that allows you to see  how fresh the egg you want to eat is.

The test is very simple. You just need to put the egg in a glass of water. If it is fresh, it will sink and remain at the bottom of the glass.

The older the egg is, the more it will float. This is because over time the egg loses fluid through the pores in the shell, making the egg lighter and allowing  more air to enter the egg.

Why is it important to eat fresh eggs?

Like any food, fresh eggs contain more nutrients and are tastier. When you buy eggs, many people don’t know how fresh they are, because at first glance they look fresh due to the production process they have undergone, such as exposure to low temperatures.

These results are more apparent if you cook older eggs and realize they don’t have the same color and taste as a fresh egg. Fresh eggs will always taste better, have a darker yolk and the white can easily separate from the yolk.

Eggs contain soluble carbon dioxide, in both the white and the yolk. Over time, this acid is secreted through the pores in the shell, increasing the pH. This causes the following phenomena:

  • loss of consistency
  • a yolk that is no longer in the middle
  • the white becomes less bright and loses its color

Do you have to wash eggs?

It is not a good idea to wash eggs, as this can weaken or damage the shell – the protective layer against organisms. When you wash eggs, the epidermis, the part of the egg that attaches to the shell, weakens and prevents bacteria from getting into the egg. 

If you wash your eggs, you risk infections.
